Recipe: Seafood Paella

Ingredients

  • 9 tablespoons- Olive Oil
  • 3 teaspoon- Garlic, chopped
  • 3 tablespoon- Onion, chopped
  • 1 spanish chorizo
  • 1/2 kilo Pork, cubed
  • 1/2 kilo  Chicken, cubed
  • 1/2 kilo Shrimps, medium-sized
  • 1/2 kilo  Squid Rings
  • 1 Red and 1 green Pepper
  • 6 tablespoons- tomato sauce
  • 6 cups- stock
  • 1 tbsp pinch- Paprika
  • 3 pinches- Saffron
  • To taste- Salt and Pepper
  • 3 cups- Paella Rice
  • 1 piece- Crab, cut in half
  • 4 pieces- Mussels
  • 10 grams- Green Peas
  • 1 piece- Lemon
  • 1 piece- Hard-boiled Egg

Procedure:

1. Saute garlic, onions, chorizo in olive oil.

2. Add pork and chicken cubes. Cook for two minutes.

3. Add shrimps and squid rings. Cook for another minute.

4. Add peppers, tomato sauce, stock, spices. Season with salt and pepper.

5. Add rice and continue to boil for fifteen minutes. Reduce fire.

6. Arrange shrimps, crabs, mussels, chorizo, pimientos, and peas on top. Cover paellera with foil and continue to cook for 45 minutes or until rice is done.

7. Garnish with lemon wedges and hard-boiled egg slices. Serve.
